We start from your case, not from a product. For a writing assistant inside Microsoft 365, an OpenAI model on Azure often does the job very well. For sorting files covered by medical or professional secrecy, an open-source model (Llama, Mistral, Qwen, Gemma) hosted in Switzerland is often a better fit. We explain the choice and its limits before we build.
